Continuing the dessert recipes from around the world, today I share a very tasty recipe from Antigua and Barbuda, the papaya pie. A pie that has a texture similar to that of a mousse.
Ingredients:
- 3 ripe papayas
- 2 teaspoons of lemon juice
- 1⁄2 teaspoon lemon zest
- 1 pinch of cinnamon
- 1 pinch of orange extract
- 4 spoons of flour
- 4 spoons of sugar
- 4 egg whites
- 1 medium-sized ready-made pie crust
Directions:
- Peel the papayas and remove the seeds. Crush them roughly.
- Add the lemon juice, lemon zest, cinnamon and orange extract. Mix well.
- Combine the flour and sugar.
- Beat the eggs until stiff peaks form.
- Gently pour the egg whites into the papaya mixture.
- Pour the mixture into the pie crust.
- Bake at 325 degrees for about 45 minutes, or until the filling is set and lightly browned on top.
- Serve cold.
