🇬🇧 Desserts: Crema Andorrana (Andorra)
Taking up the series of recipes for desserts of the world, we go to a dessert from Andorra. It is called Andorrana style cream.
Ingredients:
- 750 ml of milk
- 1 lemon zest
- 1 cinnamon stick
- 6 eggs
- 200 g of sugar
- 20 g of corn starch
- 10 g of potato starch
Directions:
- Infuse the milk with the peeled lemon (avoid the white part of the lemon) and the cinnamon for 5 minutes.
- Separate the egg whites from the yolks and, in separate bowls, beat the yolks and mix with the sugar.
- In a bowl, mix the starch and starch with a little cold milk.
- Add the eggs and sugar.
- Then remove the lemon peel and cinnamon stick from the milk and drain, pouring into the container where the other ingredients are, stirring constantly.
- Cook the entire contents in a water bath for 10 minutes, stirring and without boiling.
- Finally, pour the cream on a plate or in different containers, cover with a little sugar and burn this sugar with a blowtorch.
My advice: try to use a potato peeler that allows you to remove a very thin zest to peel the lemon, avoiding the white part. In Brazil you can also find them on the street, with street vendors. Tell me your preferred method to accomplish this.
