🇬🇧 Desserts: Yayma (Afghanistan)

The recipe for this text comes from Afghanistan. It also resembles Brazilian sweet rice, but has saffron (!) and is served with honey. It's called Yayma.


Ingredients


    • 200 g of short grain rice
    • 1 litre of milk
    • 250 ml of water
    • 150 g of refined sugar
    • Some saffron threads
    • 1 pinch of salt
    • Honey
    • Butter
    • Cinnamon


Preparation


  1. Place the saffron threads in a cup and add boiling water. Cover and leave to infuse.
  2. Wash the rice.
  3. Pour water into a pan and heat. As soon as it boils, add the rice and a pinch of salt. Continue stirring the rice for about 5 minutes until all the water has evaporated or been absorbed and the rice is half cooked.
  4. Add the milk to the rice and when the milk boils, add the saffron infusion.
  5. Stir well and lower the heat to medium.  Add the sugar and mix well.
  6. Partially cover the pan with a lid (don't cover it completely or the milk will overflow).
  7. Cook for 40 to 50 minutes, stirring occasionally to ensure the yayma doesn't burn on the bottom.
  8. If you like your rice pudding to be milky, remove the yayma from the heat before all the milk evaporates or is absorbed.
  9. Serve the yayma in a bowl with pieces of butter and cinnamon sprinkled on top. Serve with honey.
