🇬🇧 Desserts: Gatnabour (Armenia)

And we come to the third post of the day, with an Armenian sweet recipe, called “Gatnabour”, very similar to the Brazilian “Arroz doce”. Try to feel the differences.


Ingredients:

    • 1 cup of water
    • ¾ cup of short grain uncooked rice
    • 4 cups of hot milk
    • ½ cup of granulated sugar
    • 1 pinch of salt
    • 1 tablespoon of rose water (optional)
    • Ground cinnamon (optional)


Instructions:

  1. Bring 1 cup of water to a boil in a pan. Stir in the rice; Lower the heat to low and cook, covered, until the water is absorbed - about 15 minutes. Make sure the rice does not burn and does not stick to the bottom of the pan. The rice will be a little al dente. Remove the rice from the pan and set aside.
  2. Add the milk to a 4-liter pot. Heat the milk until it is hot, but not boiling. Add the rice al dente to the warm milk and cook over medium-low heat for about 45 minutes, stirring constantly. At this point the mixture should thicken as the milk begins to evaporate. Mix salt and sugar; cook for another 15 minutes and continue stirring. The mixture should start to look like thickened rice pudding. Remove from heat and add rose water if used.
  3. Pour the pudding into individual dessert bowls; allow to cool to room temperature. Serve immediately. Gatnabour can also be served cold. Sprinkle the surface with cinnamon before serving if desired.
