Our next destination on the world desserts discovery tour is Argentina. In addition to the famous alfajores, which I got to taste and are delicious, the country has many other desserts, and today we have a recipe for the “Flan Mixto”, served with the famous Argentine dulce de leche and whipped cream.
INGREDIENTS
- 350 ml of milk
- 4 egg yolks
- 2 eggs
- 120 grams of sugar
- 1 teaspoon of vanilla essence
For the caramel:
- 100 grams of sugar
- 100 ml of water
Accompaniment:
- 150 ml of sour cream
- 3 tablespoons of sugar
- 150 grams of dulce de leche
INSTRUCTIONS:
- Turn on the oven on low heat (160ºC) and puts a pan with the water in half.
- In a pan, boil the milk.
- Separately, beat the egg yolks, eggs and sugar. Add the hot milk, still whisking, and the vanilla.
- In another pan, make caramel by heating the sugar and water. Immediately distribute in five molds, moving them so that the syrup covers the bottom well.
- Pour the pudding mixture into the molds and put them in the oven on a baking sheet with water, in a double boiler. Cook for 35 minutes until the cream has hardened. Remove from the oven, leave to cool and refrigerate for two hours.
- Unmold the flans by running a round knife along the edges.
- Whip the cream with the sugar until it becomes whipped. Serve each flan with a tablespoon of cream and a tablespoon of dulce de leche.
