June started. In Brazil we have many typical parties at this time of year. Leafing through one of my cookbooks I found a typical recipe from this time: quentão. This is a version with cachaça. Quentão with cachaça is the only one at the June festivals in the region of Minas Gerais where I was born. I only got to know the quentão with wine after I moved to Porto Alegre. I have already talked in another texts about the Brazilian June festivals, the typical foods and drinks of these festivals, and I even compared them with the Juhannus from Finland (in Portuguese, English and Italian). I share with you the recipe below.
This drink is not recommended for anyone under the age of 18. Check the age limits for drinking alcohol in your area.
Mix 2 litres of water with the rind of 14 lemons in pieces, 24 cloves and 12 pieces of cinnamon. Add 2 teacups of ginger cut into very thin slices and 20 tablespoons of refined sugar. Boil the mixture for 15 to 20 minutes. Add 4 litres of the best cachaça and boil for another 5 minutes. Taste and see if the sugar is good. Strain through a sieve and serve hot. Do not boil the quentão for a long time so as not to lose the aroma of the cachaça.
Makes about 40 small mugs.
