Ingredients


    • 2 tablespoons of olive oil
    • 1 large red onion cut into strips
    • 1 red pepper cut into strips
    • 4 diced tomatoes
    • ½ tablespoon minced garlic
    • ½ teaspoon apple or fruit vinegar
    • 1 dozen seedless green olives
    • 900g of pre-cooked hearts of palm (if using canned hearts of palm, discard the liquid).
    • ¼ teaspoon freshly ground pepper or to taste
    • 1 teaspoon salt or to taste



Preparation:


    • Heat a tablespoon of oil over low heat in a large skillet. Cook and stir the onions until translucent. Add the pepper, tomatoes, garlic, vinegar and olives. Cover and cook over low heat until vegetables are cooked through.
    • Add the hearts of palm and 2 cups [0.5 liters] of water. Cook uncovered over low heat until the liquid has reduced by half. Season with pepper and salt to taste.
    • Serve: Remove from heat and serve.
