Ingredients
- 2 tablespoons of olive oil
- 1 large red onion cut into strips
- 1 red pepper cut into strips
- 4 diced tomatoes
- ½ tablespoon minced garlic
- ½ teaspoon apple or fruit vinegar
- 1 dozen seedless green olives
- 900g of pre-cooked hearts of palm (if using canned hearts of palm, discard the liquid).
- ¼ teaspoon freshly ground pepper or to taste
- 1 teaspoon salt or to taste
Preparation:
- Heat a tablespoon of oil over low heat in a large skillet. Cook and stir the onions until translucent. Add the pepper, tomatoes, garlic, vinegar and olives. Cover and cook over low heat until vegetables are cooked through.
- Add the hearts of palm and 2 cups [0.5 liters] of water. Cook uncovered over low heat until the liquid has reduced by half. Season with pepper and salt to taste.
- Serve: Remove from heat and serve.
